About
Sebastian was born in Buenos Aires, Argentina. After pursuing two different careers, at the age of 24, he found his way into the world of gastronomy and began his culinary journey by studying at IAG Culinary School.
Sebastian began his professional career by traveling to New Zealand, where he spent a year working at Hilton Hotel, in the areas of banquets and restaurant. His next experience took place at Celler de Can Roca in Girona, Spain, renowned as the world's best restaurant.
After returning to his hometown, he immersed himself in the kitchens of Faena Buenos Aires Hotel, dedicating 8 years to 'El Mercado.' His exceptional contributions and recognition led to a remarkable opportunity—the opening of 'Los Fuegos' by Francis Mallmann in Miami, United States, in 2015. He has been serving as the Chef de Cuisine for the past 8 years.
Alongside his restaurant ventures, Sebastian has also served as a private chef to some of the most influential families worldwide. Furthermore, he has collaborated with culinary luminaries such as Mauro Colagreco and Alex Atala in pop-up events that have left an indelible mark on the culinary landscape.
Today, he adds a new chapter to his professional journey with the opportunity to embark on UMŌ Cuisine, where he specializes in wood-fired cooking.
